Happy Valentine’s day! Violets anyone?

On the 16th and 17th of February, there will be a meeting of violets in Lisbon, at the Palácio Marques da Fronteira. An international meeting where people from all over the world come to talk about violets, their different cultivars, different uses, interpretations of violets in history and art.

The Five Storytelling Photography were invited to participate in the meeting, not only as photographers of the meeting, but also invited to do a speech. They chose well, i can’t imagine other photographers speaking about flowers!

We immediately thought of violets with culinary use, namely in the pastries. We once again challenged Soraia to join us for an exquisite table of sweets with a taste and violet color.

Violets can be considered a symbol of Belle Époque. Thus, nothing better than presenting and photographing this exquisite “table” in a Palace of the nineteenth century – Palacete Borralho Relógio, which is located in the land of Soraia, in Cuba (Alentejo).

From a long menu, we chose these cookies to present on Valentine’s Day and sweeten the readers of the blog Amor para Semper. When thinking about Valentine’s Day, we usually think of postcards and flowers. It is curious because in Belle Époque it was common to offer postcards where the violets of Parma were portrayed in a very romantic way. Or, simply, the young man in love offered his beloved a bouquet of Parma violets.

This recipe, is a combination of different recipes that combined very well, not only in the pictures, but in taste.


Lemon biscuits

Ingredients
200g margarine
150g sugar
320g flour
lemon zest
1 egg

Preparation
Mix the sugar with the flour, add the margarine in small pieces and the lemon zest. Then add the egg and bind the dough well. Then a ball is made and it is taken to the refrigerator for a few minutes, wrapped in adherent paper. Then extend the dough and make circles with the help of hoops. Bake approximately 15 minutes, at 180ºC, or until golden brown.


Blueberry Jam
 (you can use any jam flavour)

Ingredients
250g of blueberries
250g of sugar
Crystallized violets (optional)

Preparation
Place the fruit and sugar in a saucepan over low heat and stir until the desired consistency is reached. You can add lemon juice. It must be allowed to cool completely. You can add some crumbled crystallized violets.

 

Sighs (of Violets)

Ingredients
300g sugar
150g clear Violet dye (optional)
Violet syrup (optional)
Crystallized violets (optional)

Preparation
Bring the sugar and the egg whites lightly until slightly thickened, but be careful not to burn the egg whites. The mixture is then immediately placed in the bowl of the mixer and beat well until it’s thick, so that when the test is done with a spoon or even with the dipstick the preparation does not come loose.

Flavor if you want. In our case we added violet syrup. If you want to give color add a little dye in the desired color (in this case violet). To get darker and light parts just don’t mix, only involve.

Rosettes (with the aid of a pastry bag) are made in vegetable paper and are taken to the oven at 120ºC. When they are released from the paper you can take them out. Allow them to cool completely.

Finally, everything is embellished with crystallized violets

Nos dias 16 e 17 de Fevereiro realiza-se um Encontro de violetas, em Lisboa, no Palácio Marques da Fronteira. Um encontro internacional, onde pessoas de todo o mundo vêm falar de violetas, dos seus diferentes cultivares, diferentes utilizações, interpretações das violetas na história e na arte.
Os Five Storytelling Photography foram convidados a participar no encontro, não só como fotógrafos do encontro, mas igualmente convidados  a fazer uma comunicação. Não imagino outros fotógrafos a falarem de flores!

Pensamos imediatamente nas violetas com utilização culinária, nomeadamente na pastelaria. Desafiámos, mais uma vez, a Soraia a juntar-se  a nós para uma requintada mesa de doces com sabor e cor de violeta.

As violetas podem ser consideradas  um símbolo da Belle Époque. Assim, nada melhor do que apresentar  e fotografar essa requintada “mesa” num Palácio do século XIX – Palacete Borralho Relógio; que se situa  na terra da Soraia, em Cuba (Alentejo).

De um longo menu, escolhemos esta bolachas para apresentar no Dia dos Namorados e adoçar os leitores do blog Amor pra Sempre. Quando se pensa em Dia dos Namorados, normalmente pensamos em postais e flores. É curioso porque na Belle Époque era comum oferecerem-se postais onde as violetas de parma apareciam retratadas de forma muito romântica. Ou, simplesmente o jovem apaixonado oferecia à sua amada um bouquet de violetas de parma.

Esta receita, como disse no inicio é junção de diferentes receitas. Que combinam muito bem, não só como se pode ver nas imagens, mas como sabor.

 

Bolachas de limão

 
Ingredientes
200g margarina
150g açúcar
320g farinha
Raspa de limão
1 ovo

Preparação
Mistura-se o açúcar com a farinha, junta-se a margarina em pedacinhos e a raspa de limão. Depois junta-se o ovo e liga-se bem a massa. A seguir faz-se uma bola e leva-se ao frigorífico alguns minutos, envolta em papel aderente. Depois estendesse a massa e fazem-se círculos com a ajuda de aros . Vai a cozer aproximadamente 15 minutos, a 180ºC, ou até ficarem douradinhas.

 

Compota de Mirtilo
(pode usar outra compota)

Ingredientes
250g de mirtilos
250g de açúcar
violetas cristalizadas (opcional)

Preparação
Coloca-se num tacho, em lume brando, a fruta e o açúcar, e vai-se mexendo até ficar na consistência desejada. Pode adicionar-se sumo de limão. É necessário deixar arrefecer por completo. E pode-se adicionar violetas cristalizadas desfeitas.

 

Suspiros (de Violetas)

Ingredientes
300g de açúcar
150g claras
corante violeta (opcional)
xarope de violetas (opcional)
violetas cristalizadas (opcional)
Preparação
Leva-se a lume brando o açúcar e as claras até ficar um pouco mais espesso, mas cuidado para não queimar as claras. Depois coloca-se de imediato a mistura no copo da batedeira e bate-se bem até ficar espesso, de forma a que ao fazer o teste com uma colher ou mesmo com a vareta o preparado não se solte.

Para dar sabor, adiciona-se um aroma à escolha. No nosso caso adicionámos xarope de violetas. Se quiser dar cor adiciona-se um pouco de corante na cor pretendida (neste caso violeta). Para ficar com partes mais escuras e outras claras não se mistura na totalidade, envolve-se apenas. Fazem-se rosetas de suspiro (com o auxilio de saco de pasteleiro), num papel vegetal e leva-se ao forno a 120ºC.Retira-se quando se soltarem do papel e deixa-se arrefecer totalmente.

 

Para finalizar enfeita-se tudo com violetas cristalizadas
